STEAMED BRESSE SQUABS

From the aroma of soft and delicious Steamed Bresse Squabs, you will now have enjoyable and perfect lunch and dinner. This is made of healthy ingredients like carrots, potatoes, celery sticks, poultry broth, liver, peas, and turnips. You can simply prepare this dish for about twenty minutes and can serve for four people.

20 minutes

45 minutes

Preparation Method :

  • Singe and clean the squabs.
  • Chop the livers and mix with the foie gras and truffles.
  • Stuff the squabs with this mixture and truss (this may be done the night before cooking so that the squabs will be permeated with the flavour).
  • Cut the vegetables into thin strip and add peas.
  • Pour the poultry broth into your pressure cooker and add the vegetables. Put the squabs in the pressure cooker basket and place it in the high position.
  • Close and cook for 12 minutes beginning when the pressure cooker hisses. Open and remove 400 ml. of stock.
  • To prepare the sauce: Pour the vinegar and the 400 ml stock into a pot. Reduce to half (2 minutes). Add some sugar.
  • Add the fresh cream, as well as the foie gras and butter mixed beforehand. Mixing of ingredients should be done at a boil. Check the seasoning and take the sauce off the fire.
  • Place the squabs on a serving platter garnished with the vegetables. Serve the sauce in a gravy boat.
  • Serve hot with chutney.

INGREDIENTS

  • 4 squabs (Baby Dove)
  • 300 grams Liver
  • 50 grams foie gras 
  • 50 grams truffles 
  • ½ litre poultry broth 

For the garnish

  • 100 grams carrots 
  • 100 grams turnips 
  • 100 grams potatoes 
  • 50 grams leeks 
  • 50 grams celery sticks 
  • 50 grams peas 

For the sauce 

  • 100 ml vinegar 
  • 400 ml stock 
  • 300 ml fresh cream 
  • 50 grams foie gras 
  • 50 grams butter 
  • Salt 
  • Pepper
