BRESSE ROOSTER STEAMED AND TRUFFLED

- Clean the rooster, slip strips of truffle under the skin and rub with lemon to keep it white. chop the liver and the remaining truffles.
- Brown all this in butter for 5 minutes and moisten it with a bit of vinegar. Stuff the roosterr. Pour the broth into your pressure cooker, add the bouquet garni, vinegar, all vegetables, salt and pepper.
