Preparation Method :
- Season the chicken breasts with lemon juice, salt and pepper.
- Heat the oil in a heavy-based pan and fry the chicken until golden brown on all sides.
- Transfer to a pudding basin. Fry the onion, garlic, pepper and rice in the same pan until tile rice has turned white.
- Stir in the remaining ingredients.
- Season well with salt and pepper and pour over the chicken breasts.
- Cover with toil or greaseproof paper and tie down with string.
- Place in a steamer or covered saucepan half-filled with boiling water and steam for 40 minutes.
- Check the liquid level frequently and add more boiling water if necessary.
- Remove the foil and spoon the cooked chicken and rice on to a warmed serving plate.
- Garnish with olives and flat-leaf parsley.
- Serve at once.

- 8 boneless chicken breasts
- Juice of 1 lemon
- Salt
- Freshly ground black pepper
- 2 tablespoons Cooking oil
- 2 onions, peeled and finely chopped
- 4 cloves garlic, peeled and crushed
- 4 red peppers, cored, deseeded and diced
- 500 grams long-grain rice, well washed
- 1 kg chopped tomatoes
- Generous pinch of saffron
- 4 tablespoons chopped parsley
- 20 black olives, stoned and halved
- 2 teaspoons capers
- 500 ml chicken stock
- 200 grams frozen peas, defrosted
Garnish
- 15 black olives, stoned
- Flat-leaf parsley sprigs
