ARROZ CON POLLO

Preparation Method :

  • Season the chicken breasts with lemon juice, salt and pepper.
  • Heat the oil in a heavy-based pan and fry the chicken until golden brown on all sides.
  • Transfer to a pudding basin. Fry the onion, garlic, pepper and rice in the same pan until tile rice has turned white.
  • Stir in the remaining ingredients.
  • Season well with salt and pepper and pour over the chicken breasts.
  • Cover with toil or greaseproof paper and tie down with string.
  • Place in a steamer or covered saucepan half-filled with boiling water and steam for 40 minutes.
  • Check the liquid level frequently and add more boiling water if necessary.
  • Remove the foil and spoon the cooked chicken and rice on to a warmed serving plate.
  • Garnish with olives and flat-leaf parsley.
  • Serve at once. 

INGREDIENTS

  • 8 boneless chicken breasts
  • Juice of 1 lemon
  • Salt
  • Freshly ground black pepper
  • 2 tablespoons Cooking oil
  • 2 onions, peeled and finely chopped
  • 4 cloves garlic, peeled and crushed
  • 4 red peppers, cored, deseeded and diced
  • 500 grams long-grain rice, well washed
  • 1 kg chopped tomatoes
  • Generous pinch of saffron
  • 4 tablespoons chopped parsley
  • 20 black olives, stoned and halved
  • 2 teaspoons capers
  • 500 ml chicken stock
  • 200 grams frozen peas, defrosted

Garnish

  • 15 black olives, stoned
  • Flat-leaf parsley sprigs
