Preparation Method :
- Place semolina in a microwavable bowl, pour over stock and toss well until mixed completely. Cover and stand for 5 minutes or until liquid is absorbed.
- Place spring onions and oil in a separate microwavable bowl, cover with a microwavable plate and set aside.
- Place squash or zucchini (courgettes) in a clean microwavable plastic bag. Twist neck of bag and fold under vegetables to seal. Place bag on plate on top of bowl and cook on High for 6 minutes.
- Add spring onions, squash or zucchini (courgettes), prunes, nuts, orange rind and orange juice to couscous and mix to combine. Cover and cook on Medium for 4 minutes or until heated through.
- Serve Hot with Chicken casserole or vegetable dish.
INGREDIENTS
- 150 grams Semolina
- 250 ml boiling chicken or vegetable stock, made with stock cubes
- 3 spring onions, sliced
- 1 tablespoon Cooking oil
- 120 grams yellow squash, cut into wedges or zucchini (courgettes), sliced
- 12 dessert prunes, pitted and quartered
- 50 grams pistachio nuts, coarsely chopped
- 2 teaspoons finely grated orange rind
- 2 tablespoons orange juice
