ASPARAGUS WITH TARRAGON CREAM

Preparation Method :
- To make Tarragon Cream, place egg and sugar in a small microwavable bowl and beat until light and creamy.
- Beat in vinegar, 1 tablespoon at a time. Cook on Medium for 1 minute, stir well and set aside to cool.
- Fold cream and dill or chives into cold sauce.
- Wash asparagus under cold running water, drain, shake off excess water and place in a clean microwavable plastic bag.
- Arrange spears loosely with tips altogether. Twist neck of bag and fold under asparagus to seal.
- Place the bag on turntable with thick ends towards the edge and cook on High for 3 - 5 minutes or until asparagus is just tender. Spoon sauce over hot asparagus and serve.

- 500 grams asparagus spears, trimmed
- 1 egg
- 1 tablespoon caster sugar
- 3 tablespoons tarragon vinegar
- 100 ml double cream , whipped
- 2 tablespoons chopped fresh dill or snipped fresh chives
