THAI CHICKEN LAVASH PANCAKES

Preparation Method :

  • Place oil, garlic, ginger and chili in a microwave browning casserole dish, cover and cook on High for 2 minutes.
  • Stir in chicken, lemon grass, lime rind, lime juice and fish or soy sauce. Push chicken to edges of dish, cover and cook for 4 minutes, stir, then cook for 2 minutes longer.
  • Warm lavash bread on Defrost for 1 minute. Stir fresh coriander into chicken mixture and spoon along short end of each sheet of lavash bread, top with bean sprouts and tomatoes, roll up and serve.

INGREDIENTS

  • 1 tablespoon peanut oil
  • 1 clove garlic, crushed
  • 1 teaspoon finely chopped fresh ginger
  • 1 teaspoon finely chopped fresh red chili
  • 2 boneless chicken breast fillets, cut into thin strips
  • 1 stalk fresh lemon grass, thinly sliced or ½ teaspoon dried lemon grass, soaked in hot water until soft
  • 2 teaspoons finely grated lime rind
  • 2 tablespoons lime juice
  • 1 tablespoon fish or light soy sauce
  • 2 sheets lavash bread
  • 2 tablespoons chopped fresh coriander
  • 25 grams bean sprouts
  • 8 cherry tomatoes, quartered
