CALCUTTA BEEF CURRY

Preparation Method :

  • Mix the ground coriander, salt, chilli powder, pepper, turmeric and cumin with little milk into a large bowl.
  • Gradually stir in the remaining milk. Add the cubes of beef and stir well until the beef is evenly coated.
  • Melt the ghee in a heavy-based frying pan, add the garlic and ginger with onions and fry gently for 5 minutes or until soft.
  • Remove the beef from the spice mixture with a slotted spoon, add it to the pan and stir-fry until browned on all sides.
  • Add the milk and spice mixture, bring to the boil. Cover the pan and cook gently for an hour or until the beef is tender and the sauce reduced.
  • Sprinkle in the garam masala. Increase the heat and boil off any excess liquid to leave a thick sauce. Transfer to a warmed serving dish and serve immediately.

INGREDIENTS

  • 1.5 kg braising steak, trimmed and cut into medium cubes
  • 1 litre milk
  • 150 grams onions, thinly sliced
  • 1 tablespoon chilli powder
  • 2 teaspoons garam masala
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • 50 grams ghee
  • 5-6 garlic cloves, thinly sliced
  • 1 teaspoon ground cumin
  • 4 inch piece fresh root ginger, thinly sliced
  • Pepper and salt, to taste
