Preparation Method :
- Mix the ground coriander, salt, chilli powder, pepper, turmeric and cumin with little milk into a large bowl.
- Gradually stir in the remaining milk. Add the cubes of beef and stir well until the beef is evenly coated.
- Melt the ghee in a heavy-based frying pan, add the garlic and ginger with onions and fry gently for 5 minutes or until soft.
- Remove the beef from the spice mixture with a slotted spoon, add it to the pan and stir-fry until browned on all sides.
- Add the milk and spice mixture, bring to the boil. Cover the pan and cook gently for an hour or until the beef is tender and the sauce reduced.
- Sprinkle in the garam masala. Increase the heat and boil off any excess liquid to leave a thick sauce. Transfer to a warmed serving dish and serve immediately.

- 1.5 kg braising steak, trimmed and cut into medium cubes
- 1 litre milk
- 150 grams onions, thinly sliced
- 1 tablespoon chilli powder
- 2 teaspoons garam masala
- 1 tablespoon ground coriander
- 1 teaspoon turmeric
- 50 grams ghee
- 5-6 garlic cloves, thinly sliced
- 1 teaspoon ground cumin
- 4 inch piece fresh root ginger, thinly sliced
- Pepper and salt, to taste
