TOM BRIDGETS HUNTERS BEEF

Get your best meat recipe with Tom Bridgets hunter’s beef! This dish is perfectly fine for all occasions and even to ordinary meals. Along with its seasonings, the dish is also mixed with boneless sirloin of beef, Worcester sauce, beef stock and other flavorings to make it more appetizing.

Preparation Method :

  • Preheat the oven to Gas Mark 5/190°C/375°F.
  • Make a long pocket in the sirloin by cutting along the back with a sharp knife about 7.5cm (3 inches) into the beef.
  • To make the forcemeat, melt the butter in a large frying pan over a low heat.
  • Add the mushrooms, onion and garlic and cook atleast for 5 minutes.
  • Remove from the heat and stir it with the rest of the ingredients, season it well.
  • Stuff the forcemeat into the pocket and secure with butcher's string.
  • Put the sirloin in a roasting tin, coat with the Worcester sauce, cover with the nutmeg and crushed cloves, and season with salt and pepper.
  • Pour the beef stock into the roasting tin, cover with cooking foil and roast in the centre of the oven for 90 minutes.
  • Remove the cooking foil and pour the stock into a saucepan.
  • Return the beef to the oven and roast for a further 30 minutes on Gas Mark 8/230°C/450°F. Meanwhile, boil the stock until reduced by one-third.
  • Pour through a fine sieve into a sauce boat, remove the string from the beef, slice and serve.

INGREDIENTS

  • 1.5 kg boneless sirloin of beef
  • 4 tablespoons Worcester sauce
  • 1 whole nutmeg, grated
  • 1 teaspoon cloves, crushed
  • Salt and freshly ground black pepper (to taste)
  • 250 ml Basic Beef Stock

For the forcemeat

  • 50 grams of butter
  • 200 grams mushrooms, wiped and finely chopped
  • 1 onion, peeled and finely chopped
  • 2 cloves garlic, peeled and crushed
  • 75 grams white breadcrumbs
  • 1 tablespoon finely chopped fresh parsley
  • 3 tablespoons ginger wine
  • 3 tablespoons double cream
  • Salt and freshly ground black pepper (to taste)
