- Rinse the wheat in a colander and drain. Bring the stock to the boil with the bay leaf, salt and garlic, and a liberal sprinkling of nutmeg.
- Add the wheat, turn the heat to low and simmer for 25 to 30 minutes.
- Add the oil, vinegar and brown sugar and cook for another 10 minutes or so, stirring often, until quite tender.
- Turn into a heated serving bowl and sprinkle with chopped parsley or spring onions (scallions).
- Serve with grilled meat or fish.

- 2 bay leaves
- 2 teaspoon salt
- 4 cloves garlic, crushed freshly grated nutmeg
- 4 tablespoons Cooking oil
- 4 tablespoons vinegar
- 4 tablespoons brown sugar
- Chopped parsley or spring onions to garnish
