SWEET-SOUR CRACKED WHEAT

Preparation Method :

  • Rinse the wheat in a colander and drain. Bring the stock to the boil with the bay leaf, salt and garlic, and a liberal sprinkling of nutmeg.
  • Add the wheat, turn the heat to low and simmer for 25 to 30 minutes.
  • Add the oil, vinegar and brown sugar and cook for another 10 minutes or so, stirring often, until quite tender.
  • Turn into a heated serving bowl and sprinkle with chopped parsley or spring onions (scallions).
  • Serve with grilled meat or fish.

INGREDIENTS

  • 200 grams cracked wheat
  • 800 ml beef or chicken stock
  • 2 bay leaves
  • 2 teaspoon salt
  • 4 cloves garlic, crushed freshly grated nutmeg 
  • 4 tablespoons Cooking oil
  • 4 tablespoons vinegar
  • 4 tablespoons brown sugar 
  • Chopped parsley or spring onions to garnish
