GROUND BEEF & BEANS IN BAKED BELL PEPPERS

Preparation Method :
- Preheat the oven to 400°F (200°C/gas 6). Arrange the bell peppers skin-side down in a roasting pan. Bake for 30 minutes, until softened.
- Sauté the beef and onion in the oil in a large frying pan over medium heat for 5 minutes. Add the chilli powder and tomatoes. Season with salt and pepper.
- Bring to a boil then simmer over low heat until reduced, 15 minutes. Add the beans and stir until heated through.
- Spoon the beef mixture into the bell peppers. Top with sour cream and garnish with the cilantro. Serve hot.
INGREDIENTS
- 6 red bell peppers (capsicums), halved and seeded
- 750 grams ground (minced) beef
- 2 onions, finely chopped
- 4 tablespoon sesame oil
- 4 teaspoons chilli powder
- 500 grams tomatoes, with juice
- Salt and freshly ground black pepper
- 500 grams white kidney beans, drained
- Sour cream, to serve
- Fresh cilantro (coriander) leaves, to garnish
