- Put all the marinade ingredients in a glass or china bowl, mix them thoroughly.
- Place the noisettes of beef in the marinade, covering all the meat, and let it stand for 6 hours at room temperature.
- Place the noisettes on the barbecue and cook to your liking on each side, basting them with the marinade.
INGREDIENTS
- 175 grams noisettes of fillet of beef
For the marinade
- 50 ml Cooking oil
- 150 ml dry sherry
- 6 teaspoons demerara sugar
- 50 ml dark soy sauce
- 4 cloves garlic, peeled and crushed
- 3 tablespoons concentrated orange juice
- Salt and freshly ground black pepper (to taste)
- A pinch of fennel seed
