- Cook the sweet potatoes in a large pot of salted boiling water until tender, 15 minutes. Drain well and return to the pan. Mash with the butter and milk.
- Sauté the mushrooms, scallions, and garlic in 2 tablespoons of oil in a large frying pan over medium heat until softened, 5 minutes.
- Stir in the cream, lemon juice, thyme, and salt. Bring to a boil. Simmer over low heat until thickened, about 1 minute.
- Heat the remaining oil in a large frying pan over high heat. Cook the steaks for 5-10 minutes, until cooked to your liking. Serve hot with the vegetables.
