BEEF AND SWEET POTATOES PASTIES

Preparation Method :
- Cut Beef and vegetables into 5mm cubes.
- Combine Beef, vegetables, parsley and shallots in bowl.
- Divide pastry into 2 portions.
- Roll 1 portion between sheets of baking paper until 3mm thick.
- Cut pastry into 6 x 12cm rounds; top each round with 1/4 cup Beef mixture.
- Lightly brush edges with egg yolk, fold over, pinch edges together to seal.
- Repeat with remaining pastry, filling and egg yolk.
- Place pasties on greased oven trays, brush with remaining egg yolk.
- Bake in moderate oven about 25 minutes or until browned.
- Serve with tomato sauce.
Pastry:
- Sift flour into bowl, rub in butter and lard. Stir in enough water to make ingredients cling together.
- Press dough into a ball, knead on floured surface until smooth, cover and refrigerate 30 minutes.
Tomato Sauce:
- Combine ingredients in small bowl.

- 250 grams rump Beef
- 150 grams Sweet potatoes, peeled
- 150 grams old potato, peeled
- 150 grams Swede
- 100 grams Onion
- 1 tablespoon chopped fresh parsley
- 2 green shallots, chopped
- 1 egg yolk
PASTRY
- 500 grams Plain flour
- 100 grams butter, chopped
- 100 grams lard
- 150 ml water
TOMATO SAUCE
- 250ml tomato sauce
- 1 teaspoon Worcestershire sauce
