BEEF A LA MODE

The beef a la mode is filled with tasty ingredients like beef dripping, beef sirloin, white wine and other special seasonings. With its palatable ingredients, you can never defy its every bite. This dish is firmly best not just for daily meal but other events as well.

Preparation Method :

  • Preheat the oven to Gas Mark 2/150°C/300°F.
  • Gently heat the beef dripping in a large roasting tin until it becomes smoking hot.
  • Carefully brown the sirloin on all sides.
  • Repeat the process with the gammon rashers.
  • Place the gammon rashers in a clean roasting tin.
  • Put the sirloin on top of the gammon rashers, with the calf's foot and shin bone at the side.
  • Pour the wine over the beef, season it well with salt and pepper, cover with foil and cook it for 2 hours.
  • Add the vegetables and other ingredients and cook for another 2 hours.
  • Remove the meat carefully, and discard the string, shin bone and calf's foot.
  • Allow the meat to cool for 3 minutes, then slice thickly.
  • Arrange the slices on a warm serving dish surrounded by the gammon rashers and vegetables.
  • Strain over the juices, discarding the sprigs of herbs and the cloves, and then serve.

INGREDIENTS

  • 100 grams beef dripping 
  • 2 kg beef sirloin, boned and rolled
  • 300 grams gammon rashers 
  • 1 calf's foot, chopped 
  • 1 shin bone
  • 250 ml dry white wine 
  • Salt and freshly ground black pepper (to taste)
  • 4 carrots, peeled and diced 
  • 4 onions, peeled and diced 
  • 250 grams button mushrooms, wiped
  • 4 celery stalks, washed and diced 
  • 1 teaspoon freshly grated nutmeg 
  • 9 cloves
  • A sprig of thyme and a sprig of parsley
