CHICKEN NOISETTES WITH PESTO FILLING

Preparation Method :

  • Chicken Noisettes Preheat the oven to 350°F (180°C/gas 4). Trim the slices of bacon to the same size as the chicken breasts. Reserve the trimmings.
  • Gently flatten the chicken with a meat tenderizer. Drizzle with the lemon juice and season with salt and pepper.
  • Pesto Filling Combine all the filling ingredients and bacon trimmings in a food processor and chop until smooth. Spread each chicken breast with a quarter of the filling and roll up.
  • Wrap a bacon slice around each noisette, overlapping the ends. Insert a wooden skewer through the overlap and the center of each noisette. Butter a baking dish.
  • Place the noisettes in the dish and brush with melted butter. Bake until golden brown, about 30 minutes. Slice and serve hot with vegetables.

INGREDIENTS

Chicken Noisettes

  • 6 slices bacon
  • 6 boneless skinless chicken breast halves
  • 2 tablespoon freshly squeezed lemon juice
  • Salt and freshly ground black pepper
  • 4 tablespoons melted butter

Pesto Filling

  • 100 grams fresh bread crumbs
  • 2 clove garlic
  • 50 grams pine nuts
  • 2 tablespoon freshly squeezed lemon juice
  • 100 ml sesame oil
  • Salt and freshly ground black pepper
  • 2 small bunch fresh parsley or basil
  • Steamed vegetables, to serve
