PICKLED CHILLI PEPPERS
Preparation Method :
- Prick the peppers all over so that they will absorb the marinade.
 - Pack tightly together in a large glass jar with the chilli.
 - Add salt, water and vinegar, ensuring that there is no air trapped between the peppers.
 - Seal and store for three weeks by which time the peppers will have softened. Remove the amount required, drain and serve.
 
INGREDIENTS
- 450 grams long mild Chilli peppers
 - 1 small dried chilli
 - 1½ tablespoons salt
 - 300 ml water
 - 120 ml white wine
 - Vinegar
