Preparation Method :
- Mix the tahini, yogurt, salt and fresh mint in a small bowl and set aside.
 - Marinate the onion, zucchini, carrot and capsicum in a mixture of oil, lemon juice, mixed herbs, chilli flakes and salt for about fifteen minutes.
 - Grill the vegetables on a hot grill till the grill marks are seen on the pieces. Remove and divide into four portions.
 - To assemble the rolls, spread the tahini mixture on each roti, top with a portion of vegetables, sprinkle with parsley and roll up tightly.
 - Serve immediately.
 
INGREDIENTS
- 6 whole wheat roti
 - 3 teaspoons tahini
 - 200 grams yogurt
 - 10 fresh mint, roughly torn
 - 2 medium onion, quartered
 - 1 medium zucchini, sliced
 - 2 medium carrot, sliced
 - 2 medium green capsicum, cut into thick strips
 - 4 teaspoons lemon juice
 - 2 teaspoon mixed dried herbs
 - 2 teaspoons red chilli flakes
 - A few sprigs of fresh parsley, chopped
 - Salt to taste
 - 5 tablespoons Cooking oil
