Preparation Method :
- Soak the liver for 30 minutes in cold, salted water. Remove pat it dry on kitchen paper and then cut the slices into thin strips.
- Rub the salt, pepper and garlic into the liver strips, then sprinkle it with paprika.
- Heat the butter, add lemon juice and toss the liver in it over a high heat for about 1 minute each side.
- Remove to a dish and then serve it immediately, garnished with the parsley.

- 250 grams lambs or calves liver
- Salt and pepper
- 1 clove garlic, crushed
- Pinch of paprika
- 2 tablespoons butter
- 3 tablespoons lemon juice
- Parsley, to garnish
