BRAINS IN LEMON AND OLIVE OIL DRESSING

- Clean thoroughly Brain membranes. Put the brains in a pan, add water, the vinegar, Jemon and onion slices, and a pinch of salt.
 - Cover and simmer for 15 - 16 minutes on a low heat. Do not cook too vigorously or the brains will break. Leave to cool, then drain.
 - Now cut the brains into quarters. Blend the lemon juice, oil, parsley, garlic and seasonings to taste and pour over the brains.
 - Serve it with lemon chilled wedges and garnish of parsley.
 
INGREDIENTS
- 4 sets lambs' brains
 - 4 tablespoons vinegar
 - ½ lemon, sliced
 - ½ onion, sliced
 - Salt and white pepper, to taste
 - Juice of 2 lemons
 - 4 tablespoons Cooking oil
 - 2 tablespoons finely chopped parsley
 - ½ clove garlic, crushed
