ARTICHOKE HEARTS IN OLIVE OIL

Preparation Method :
- Remove the stalk and outer leaves of each artichoke and drop the hearts into a bowl of cold water acidulated with a few drops of the lemon juice.
- Place the hearts in a heavy pan with 400 ml water, half the quantities of lemon juice and olive oil and the garlic.
- Season with salt and pepper, then boil. Simmer uncovered about 30 minutes until the hearts are tender.
- Remove the hearts from the liquid and cool.
- Mix the rest of the oil and lemon juice with half the remaining liquid, add more seasoning to taste.
- Pour over the hearts and chill. Serve cold.
