Preparation Method :
- Add pasta to the boiling water with a teaspoon of salt and cook for 8- 10 minutes until the pasta is tender.
- Meanwhile, in a sauce-pan heat the oil and stir fry the tomatoes, garlic and olives for 2-3 minutes.
- Now add the lemon juice, red pepper flakes, tarragon, salt and pepper. Stir it and cook for a minute.
- Turn off the heat and add the mozzarella cheese.
- Drain the pasta in a colander and add it to the sauce pan containing tomato and cheese mixture. Mix it well.
- Serve immediately.

- 250 grams penne pasta
- 125 grams fresh mozzarella (cut into cubes)
- 75 grams black olives (pitted and sliced)
- 3 tomatoes (diced)
- 2 cloves of garlic (finely sliced)
- 2 tablespoons Cooking oil
- 1 tablespoon lemon juice
- 1 teaspoon tarragon
- 1 teaspoon red pepper flakes
- Water for cooking pasta
- Salt to taste
- Pepper to taste
