POMODORO E MOZZARELLA

Cooking Time :
15 minutes

Preparation Method :

  • Add pasta to the boiling water with a teaspoon of salt and cook for 8- 10 minutes until the pasta is tender.
  • Meanwhile, in a sauce-pan heat the oil and stir fry the tomatoes, garlic and olives for 2-3 minutes.
  • Now add the lemon juice, red pepper flakes, tarragon, salt and pepper. Stir it and cook for a minute.
  • Turn off the heat and add the mozzarella cheese.
  • Drain the pasta in a colander and add it to the sauce pan containing tomato and cheese mixture. Mix it well.
  • Serve immediately.

INGREDIENTS

  • 250 grams penne pasta
  • 125 grams fresh mozzarella (cut into cubes)
  • 75 grams black olives (pitted and sliced)
  • 3 tomatoes (diced)
  • 2 cloves of garlic (finely sliced)
  • 2 tablespoons Cooking oil
  • 1 tablespoon lemon juice
  • 1 teaspoon tarragon
  • 1 teaspoon red pepper flakes
  • Water for cooking pasta
  • Salt to taste
  • Pepper to taste
