VEAL ESCALOPES WITH LEMON AND PINE NUTS

Preparation Method :

  • Season the flour with salt and pepper. Dip the veal escalopes into the flour to coat evenly.
  • Heat the butter and oil in a frying pan. When it is foaming, add the escalopes and cook for 3 minutes on each side or until golden.
  • Sprinkle the pine nuts into the pan and stir until golden.
  • Add the lemon peel and juice, stock, and parsley, and season with salt and pepper.
  • Bring to a boil and mix well.
  • Serve immediately with Risotto alia Milanese.

INGREDIENTS

  • 500 grams all-purpose flour
  • 200 grams veal escalopes
  • 200 grams butter
  • 2 tablespoon Cooking oil
  • 400 grams pine nuts
  • Peel and juice of 2 lemons
  • 10 tablespoons chicken stock
  • Parsley, finely chopped
  • Salt and pepper
  • Risotto alia Milanes, to serve
