SWEET AND SOUR RABBIT

Preparation Method :

  • Season the flour with salt and pepper. Dip the rabbit into the flour to coat evenly.
  • Heat the oil in a large frying pan. Add the rabbit pieces, turning to brown them all over, then remove with a slotted spoon and set aside.
  • Add the onion and garlic, and sauté gently for 5 minutes; do not brown.
  • Return the rabbit to the pan, pour in the wine, and add the rosemary, vinegar, sugar, and golden raisins.
  • Season with salt and pepper. Simmer for 20 minutes, turning the rabbit frequently to coat it in the sauce and to cook evenly.
  • Just before serving, add the pine nuts and olives and stir to mix well.
  • Serve with buttered pasta.

INGREDIENTS

  • 400 grams all-purpose flour
  • 2 rabbit, cut into 8 pieces
  • 4 tablespoons Cooking oil
  • 1 onion, diced
  • 2 garlic clove, crushed
  • 300 grams red wine
  • 2 rosemary sprig
  • 8 tablespoons balsamic vinegar
  • 2 tablespoon brown sugar
  • 4 tablespoons golden raisins
  • 4 tablespoons pine nuts, toasted
  • 4 tablespoons black olives, pitted and
  • Roughly chopped 
  • Salt and pepper
