Preparation Method :
- Season the flour with salt and pepper. Dip the rabbit into the flour to coat evenly.
- Heat the oil in a large frying pan. Add the rabbit pieces, turning to brown them all over, then remove with a slotted spoon and set aside.
- Add the onion and garlic, and sauté gently for 5 minutes; do not brown.
- Return the rabbit to the pan, pour in the wine, and add the rosemary, vinegar, sugar, and golden raisins.
- Season with salt and pepper. Simmer for 20 minutes, turning the rabbit frequently to coat it in the sauce and to cook evenly.
- Just before serving, add the pine nuts and olives and stir to mix well.
- Serve with buttered pasta.

- 2 garlic clove, crushed
- 300 grams red wine
- 2 rosemary sprig
- 8 tablespoons balsamic vinegar
- 2 tablespoon brown sugar
- 4 tablespoons golden raisins
- 4 tablespoons pine nuts, toasted
- 4 tablespoons black olives, pitted and
- Roughly chopped
- Salt and pepper
