PARMESAN BREADED LAMB CHOPS

Preparation Method :
- Season the flour with salt and pepper. Dip the lamb chops into the flour to coat evenly.
- Mix together the Parmesan and bread crumbs in a shallow dish and season with salt and pepper.
- Dip the cutlets first into the beaten egg and then into the Parmesan mixture to coat all over, pressing the crumbs onto the lamb.
- Heat the oil in a frying pan. Add the lamb chops and cook on each side for 4 minutes or until golden.
- Take care when turning them over; a flexible knife is best, so as not to loosen any of the cheesy crust from the chops.
- Serve immediately with lemon wedges.

- 500 grams all-purpose flour
- 15 lamb chops, trimmed
- 200 grams freshly grated Parmesan cheese
- 200 grams fresh bread crumbs
- 4 eggs, beaten
- 4 tablespoons Cooking oil
- Salt and pepper
- 2 lemons cut into 4 wedges, to serve
