PAN-COOKED RABBIT WITH SAGE

Preparation Time :
10 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Heat the oil in a large frying pan, add the rabbit and brown all over.
  • Season well with salt and pepper. Add the sage, rosemary, wine, and mustard.
  • Mix thoroughly and coat the rabbit in the wine sauce.
  • Simmer the rabbit for 20 minutes, turning frequently so that it cooks evenly.
  • To serve, sprinkle the rabbit generously with the chopped parsley.

INGREDIENTS

  • 4 tablespoons Cooking oil
  • 2 rabbit, cut into 8 pieces 
  • chopped sage 
  • 2 large rosemary sprigs 
  • 500 grams dry white wine 
  • 2 tablespoon Dijon mustard 
  • Salt and pepper
  • Italian parsley, roughly chopped, to serve
