PAN-COOKED RABBIT WITH SAGE

Preparation Method :
- Heat the oil in a large frying pan, add the rabbit and brown all over.
- Season well with salt and pepper. Add the sage, rosemary, wine, and mustard.
- Mix thoroughly and coat the rabbit in the wine sauce.
- Simmer the rabbit for 20 minutes, turning frequently so that it cooks evenly.
- To serve, sprinkle the rabbit generously with the chopped parsley.

- 2 large rosemary sprigs
- 500 grams dry white wine
- 2 tablespoon Dijon mustard
- Salt and pepper
- Italian parsley, roughly chopped, to serve
