BREADED VEAL ESCALOPES WITH PARMA HAM AND PARMESAN

Preparation Method :

  • Place the veal escalopes between 2 sheets of waxed paper and flatten them by pounding with a rolling pin.
  • Season the flour with salt and pepper. Dip the escalopes first into the flour, then into the beaten egg and finally into the bread crumbs to coat evenly.
  • Melt the butter in a large frying pan. When it is foaming, add the escalopes and cook for 1-2 minutes on each side until golden.
  • Place the escalopes on a broiler pan. Put a piece of Parma ham on each one and sprinkle with grated Parmesan.
  • Place the escalopes under a preheated very hot broiler and cook for 4-5 minutes until the Parmesan is golden.
  • Garnish the escalopes with chopped parsley and serve with lemon wedges.

INGREDIENTS

  • 300 grams veal escalopes 
  • 400 grams all-purpose flour
  • 4 eggs, beaten
  • 750 grams fresh bread crumbs 
  • 250 grams butter
  • 100 grams Parma ham
  • 200 grams freshly grated Parmesan cheese
  • Salt and pepper
  • Italian parsley, to garnish
  • 2 lemon, cut into 4 wedges, to serve
