BREADED VEAL ESCALOPES WITH PARMA HAM AND PARMESAN

Preparation Method :
- Place the veal escalopes between 2 sheets of waxed paper and flatten them by pounding with a rolling pin.
- Season the flour with salt and pepper. Dip the escalopes first into the flour, then into the beaten egg and finally into the bread crumbs to coat evenly.
- Melt the butter in a large frying pan. When it is foaming, add the escalopes and cook for 1-2 minutes on each side until golden.
- Place the escalopes on a broiler pan. Put a piece of Parma ham on each one and sprinkle with grated Parmesan.
- Place the escalopes under a preheated very hot broiler and cook for 4-5 minutes until the Parmesan is golden.
- Garnish the escalopes with chopped parsley and serve with lemon wedges.

- 300 grams veal escalopes
- 400 grams all-purpose flour
- 4 eggs, beaten
- 750 grams fresh bread crumbs
- 250 grams butter
- 100 grams Parma ham
- 200 grams freshly grated Parmesan cheese
- Salt and pepper
- Italian parsley, to garnish
- 2 lemon, cut into 4 wedges, to serve
