KUMBI PULAO

Preparation Time :
20 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Wash the rice and leave to soak. Meanwhile heat the oil and butter and saute the onions until a soft golden brown.
  • Add in the onion seeds, ginger, garlic and salt , then add whole mushrooms and stir-fry for about 2 minutes.
  • Add rice with water and stir , bring to the boil, lower the heat, cover and simmer for 20 minutes or until the rice is cooked.
  • Leave to stand for 5 minutes to allow the rice to dry out a little.
  • Serve garnished with fresh coriander.

INGREDIENTS

  • 500 grams basmati rice
  • 1 tablespoon Cooking oil
  • 100 grams  butter
  • 1 medium onion, peeled and sliced
  • 1 teaspoon onion seeds
  • 1 teaspoon diced and crushed ginger root
  • 1 teaspoon crushed garlic
  • 1 ½ teaspoons salt
  • 200 grams  mushrooms, peeled or wiped
  • 700 ml water
  • 1 tablespoon chopped fresh coriander to garnish
