KUMBI PULAO

Preparation Method :
- Wash the rice and leave to soak. Meanwhile heat the oil and butter and saute the onions until a soft golden brown.
- Add in the onion seeds, ginger, garlic and salt , then add whole mushrooms and stir-fry for about 2 minutes.
- Add rice with water and stir , bring to the boil, lower the heat, cover and simmer for 20 minutes or until the rice is cooked.
- Leave to stand for 5 minutes to allow the rice to dry out a little.
- Serve garnished with fresh coriander.
INGREDIENTS
- 500 grams basmati rice
- 1 tablespoon Cooking oil
- 100 grams butter
- 1 medium onion, peeled and sliced
- 1 teaspoon onion seeds
- 1 teaspoon diced and crushed ginger root
- 1 teaspoon crushed garlic
- 1 ½ teaspoons salt
- 200 grams mushrooms, peeled or wiped
- 700 ml water
- 1 tablespoon chopped fresh coriander to garnish
