STIR-FRIED MANGETOUT (SNOW PEAS) WITH WATER CHESTNUTS

Preparation Method :
- Top and tail the peas. Drain and thinly slice the water chestnuts.
 - Heat the oil in a wok or large frying pan over high heat. Put in the peas, water chestnuts and garlic, and stir-fry 2 minutes. Remove the garlic.
 - Pour in the wine or sherry and tamari or shoyu sauce. Lower the heat and stir-fry a further 2 minutes.
 
INGREDIENTS
- 500 grams mangetout peas
 - 250 grams tin water chestnuts
 - 2 garlic cloves, peeled and left whole
 - 4 tablespoons Chinese rice wine or dry sherry
 - 2 tablespoons tamari or shoyu sauce
