STIR-FRIED LOBSTER AND PORK

Preparation Method :
- Place lobster on its back on a chopping board. Chop with a heavy cleaver down its entire length.
- Chop tail into 5 cm pieces. Cut legs in half and chop each claw into 3 pieces.
- Heat oil in a wok. Stir in garlic and ginger. Add lobster and stir-fry for 2½ minutes until shell is bright red and lobster meat is white and opaque. Remove lobster.
- Combine soy sauce, sherry, sesame oil and pork. Stir-fry for 2 minutes or until pork has lost any trace of pink. Return lobster to wok.
- Add chicken stock and heat to boiling point. Stir in egg and stir-fry 30 seconds.

- 1½ kg green (uncooked) lobster
- 5 tablespoons Cooking oil
- 2 clove garlics, crushed
- 2 thin slice fresh ginger root, finely chopped
- 4 tablespoons soy sauce
- 2 tablespoons sherry
- 1 teaspoon Sesame oil
- 250 grams lean pork, minced
- 6 tablespoons chicken stock
- 2 eggs, beaten
