STIR-FRIED CRAB, GINGER AND SHALLOTS

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Cut green crabs in half and segment them. Heat oil in a wok. Add garlic, ginger and shallots, and stir-fry for 30 seconds.
  • Add crab pieces and stir-fry to coat with oil. Pour in stock, soy sauce, sherry, sugar and sesame oil and bring quickly to the boil.
  • Cool covered until crab shells turn pink. Stir in blended corn flour, bring to the boil and serve.

INGREDIENTS

  • 4 large live crabs
  • 4 tablespoons Cooking oil
  • 2 clove garlics, crushed
  • 6 thin slices fresh ginger root, finely chopped
  • 2 bunch shallots, sliced
  • 250 ml chicken stock
  • 2 tablespoons soy sauce
  • 2 tablespoons sherry
  • 1 teaspoon sugar
  • Dash of Sesame oil
  • 4 teaspoons corn flour blended with
  • 4 tablespoons water
