Preparation Method :
- Cut beef across the grain into thin strips. String celery if necessary, and then slice diagonally.
- Combine sherry, soy sauce, sesame oil and corn flour in a bowl. Add beef and toss to coat. Stand about 10 minutes.
- Heat half the oil in a wok. Add beef and stir-fry, in two batches, for 3 minutes each. Remove beef and keep warm.
- Heat remaining oil in the wok, add celery and stir-fry for 1 minute. Add chicken stock and simmer for 2 - 2½ minutes.
- Return beef to wok and heat through. Blend remaining corn flour with water, add to and stir until thickened.

- 4 tablespoons sherry
- 4 tablespoons soy sauce
- 1 teaspoon Sesame oil
- 5 teaspoons corn flour
- 6 tablespoons Cooking oil
- 250 ml chicken stock
- 4 tablespoons water
