STIR-FRIED BEAN SPROUTS

Preparation Method :
- Pour boiling water over bean sprouts and let stand 20 seconds
 - Refresh in cold running water, drain and dry. Heat oil in wok. Add ginger and stir fry 30 seconds.
 - Add capsicum, onion and shallots and stir fry 1½ minutes. Add bean sprouts and ham and stir-fry 30 seconds.
 - Add combined stock and sherry and bring to the boil.
 - Remove from heat and serve.
 
INGREDIENTS
- 500 grams bean sprouts
 - 4 tablespoons Cooking oil
 - 2 thin slice fresh ginger root, finely chopped
 - 1 green capsicum, sliced
 - 1 green onion cut in wedges
 - 20 shallots, sliced
 - 4 thin slices ham, shredded
 - 4 tablespoons chicken stock combined with
 - 1 tablespoon sherry
