STIR-FRIED BEAN SPROUTS WITH GREEN PEPPERS

Preparation Method :
- Core and seed the peppers, and cut them into 1-inch (2.5 cm) squares.
 - Heat the oil in a wok or large frying pan over high heat. Put in the garlic and ginger, and stir-fry 30 seconds.
 - Put in the peppers, and stir-fry 1 minute. Mix in the bean sprouts, and stir-fry a further 1 minute.
 - Add the wine or sherry and tamari or shoyu sauce, and stir-fry 1 minute more. The vegetables should both still be crisp.
 
INGREDIENTS
- 350 grams bean sprouts
 - 3 green peppers
 - 4 tablespoons Cooking oil
 - 1 garlic clove, finely chopped
 - 15 grams fresh ginger root, peeled and grated
 - 2 tablespoons Chinese rice wine or dry sherry
 - 2 tablespoons tamari or shoyu sauce
