BRAISED CHICKEN AND BLACK BEAN SAUCE

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat oil in a wok. Add garlic and beans and stir-fry 1 minute. Add chicken and cook over high heat 3 minutes.
  • Add sherry, sugar, soy sauce, pepper and stock. Cook covered 3 minutes.
  • Stir in tomatoes and blended corn flour water. Cook until boiling and thickened.

INGREDIENTS

  • 4 tablespoons Cooking oil
  • 1 teaspoon chopped garlic
  • 4 teaspoons black beans, chopped
  • 750 grams boned chicken, cut in 2 cm dice
  • 2 tablespoons sherry
  • 1 teaspoon sugar
  • 4 teaspoons soy sauce
  • Pinch pepper
  • 5 tablespoons chicken stock
  • 4 tomatoes, peeled, and cut in 2 cm dice
  • 5 teaspoons corn flour blended with
  • 5 tablespoons water
  • 6 shallot flowers, for garnish
