BRAISED ABALONE WITH CHINESE CABBAGE

Preparation Time :

Cooking Time :
30 minutes

Preparation Method :

  • Heat oil. Add ginger, garlic and cabbage stems. Stir-fry 1 minute.
  • Add cabbage leaf, sugar, sherry and abalone liquid. Cook until vegetable is bright green.
  • Arrange cabbage on serving platter and keep warm.
  • Add sesame oil, oyster and soy sauces to pan. Blend corn flour with remaining liquid. Stir into thicken when boiling.
  • Reduce heat, and fold in abalone slices, to heat through briefly. Extended cooking will toughen abalone.
  • Arrange slices over cabbage.
  • Spoon over sauce and serve at once.

INGREDIENTS

  • 2 tablespoons Cooking oil
  • 2 teaspoons fresh chopped ginger root
  • 1 teaspoon chopped garlic
  • 1 kg Choy sum cabbage, cut into 5 cm lengths
  • 2 teaspoons sugar
  • 4 teaspoons dry sherry
  • 200 ml reserved canned abalone liquid
  • 2 teaspoons Sesame oil
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 4 teaspoons corn flour
  • 1 kg canned abalone, thinly sliced-retain liquid
  • 5 tablespoons water
