Preparation Method :
- First of all clean the periwinkles, by placing them in a sauce pan full of water and salt.
- Bring to a boil and toss in the snails. Let them simmer for a few minutes, remove and use a toothpick to pull the meat from the shells.
- Don't boil them too long because it may become very tough and chewy in texture.
- In a large sauce, heat chicken stock, potatoes, tarragon, paprika and season with salt and pepper.
- Melt butter in a skillet, and lightly sauté the cleaned Periwinkle meat, onion, celery, and bacon.
- Add this to stock mixture.
- Gently stir in wine and simmer until potatoes are cooked. (Do not boil)
- Add milk and cream slowly, stirring constantly to prevent coagulation.
- Add cayenne and mix it well.
- Serve it hot.

- 2 potatoes (diced)
- 1 teaspoon tarragon
- 1 teaspoon paprika
- salt and pepper as per taste
- 3 onions (chopped)
- 1 stalk of celery (chopped)
- 3 slices bacon (chopped)
- 150 ml dry white wine
- 250 ml milk
- 60 gram butter
- 300 gram cleaned periwinkles
- 100 ml light cream
- 1 tea spoon cayenne pepper
