Preparation Method :
- Put the butter, flour and milk in a saucepan. Heat, whisking continuously, until the sauce thickens, boils and is smooth. Simmer for 1-2 minutes.
- Remove pan from the heat, add the cheese and stir until melted. Season to taste. Beat in the egg yolks.
- Whisk the egg whites until stiff and fold into the sauce with a large metal spoon.
- Pour the mixture into 6 greased ramekin dishes and bake for 30 minutes, until risen and golden brown.
- Serve immediately with brown bread and butter.
