OYSTERS IN CHIVE SAUCE

Preparation Method :
- Arrange the oysters on a bed of salt in a heatproof shallow dish.
- Keep it in refrigerator until ready to cook.
- To prepare the sauce, heat the butter in a pan.
- Add the vinegar and boil it until the sauce becomes syrupy.
- Stir in the lemon juice, oyster juices and chopped chives.
- Divide this mixture between the oysters and put the dish under the grill for 2- 3 minutes.
- Sprinkle some chopped parsley over the oysters.
- Serve immediately.

- 2 oysters on the half shell, juices reserved
- 1 tablespoons fresh lemon juice
- 30 grams unsalted butter
- 2 tablespoon white wine vinegar
- 250 gram rock salt
- handful of chives and parsley, chopped
