Preparation Method :
- Put the roe in a blender or food processor. Add the breadcrumbs, parsley, lemon juice, egg yolk, yogurt and mace.
- Season to taste and work together until smooth. Turn into a bowl.
- Whisk the egg white until stiff, and then fold into the mixture.
- Spoon into 6 greased ramekin dishes.
- Bake for 15-20 minutes, until well risen and golden brown.
- Serve at once, accompanied with fingers of toast.

- 150 grams smoked cod's roe, skinned
- 25 grams fresh breadcrumbs
- 10 ml chopped fresh parsley
- 20 ml lemon juice
- 1 egg, separated
- 75 grams natural yogurt
- Pinch of ground mace
- Salt and pepper
