VEGETABLE SOUP WITH COUSCOUS

Preparation Time :
10 minutes

Cooking Time :
1 hour

Preparation Method :

  • Heat the oil in a heavy pan.
  • Sauté the vegetables together with the salt, pepper and hot pepper sauce for 3 to 4 minutes.
  • Add water, chickpeas, coriander, turmeric and stock cube.
  • Boil the soup.
  • In a separate bowl, hard boil the egg. (Simmer for 30 minutes).
  • Remove eggs from heat.
  • Peel and slice the hard- boiled egg and add to the soup.
  • Simmer for another 15 to 20 minutes.
  • Serve over steamed couscous.  

INGREDIENTS

  • 2 green peppers
  • 2 tomatoes, chopped
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 5 tablespoons of Cooking oil
  • 2 teaspoon salt
  • 1 teaspoon black pepper , ground
  • 2 teaspoon hot sauce or Tabasco
  • 2 litre water
  • 800 grams tin chickpeas, drained
  • 2 tablespoon chopped fresh coriander
  • 1 teaspoon turmeric
  • 2 vegetable stock cubes
  • 4 eggs
  • 200 gram freshly cooked hot couscous
