Preparation Method :
- In a saucepan, add the meat and enough water so as to cover the meat, season to taste and bring to boil.
- Simmer for 1½ hours.
- Add the vegetables and barley.
- Cover and simmer for another one hour, until the vegetables and barley are soft.
- Skim off any fat formed on the surface of the broth.
- Garnish with chopped parsley and serve the soup hot.
INGREDIENTS
- 500 grams shin of beef, cut into pieces
- 1 small-sized carrot, peeled and julienned
- 1 small-sized turnip, peeled and cut
- 1 small-sized onion, skinned and cut
- 1 leek, trimmed, chopped and washed
- 2 tablespoons of pearl barley
- Chopped fresh parsley for garnishment
- Salt and pepper to taste
