PRAWN BISQUE

Serves :
4

Preparation Time :
10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Melt the butter in a saucepan, add flour and cook for 2 - 3 minutes.
  • Remove from the heat and gradually pour in the stock.
  • Boil it and keep stirring until the soup thickens.
  • Add the lemon juice, dry white wine and prawns and cook at low flame for 3 minutes.
  • Remove from the heat.
  • Add the fresh cream, salt and pepper
  • Reheat it but do not boil.
  • Serve garnished with whole, fresh prawns and chopped fresh parsley.

INGREDIENTS

  • 20 grams English butter
  • 3 Tablespoon flour 
  • 700 ml fish or chicken stock 
  • ½ lemon juice
  • 125 ml dry white wine 
  • 200 grams peeled prawns 
  • 100 ml fresh double cream
  • Salt and freshly ground pepper as per taste
  • 1 kg fresh prawns 
  • Fresh parsley, chopped for garnishing
