Preparation Method :
- Melt the butter in a saucepan, add flour and cook for 2 - 3 minutes.
- Remove from the heat and gradually pour in the stock.
- Boil it and keep stirring until the soup thickens.
- Add the lemon juice, dry white wine and prawns and cook at low flame for 3 minutes.
- Remove from the heat.
- Add the fresh cream, salt and pepper
- Reheat it but do not boil.
- Serve garnished with whole, fresh prawns and chopped fresh parsley.
INGREDIENTS
- 20 grams English butter
- 3 Tablespoon flour
- 700 ml fish or chicken stock
- ½ lemon juice
- 125 ml dry white wine
- 200 grams peeled prawns
- 100 ml fresh double cream
- Salt and freshly ground pepper as per taste
- 1 kg fresh prawns
- Fresh parsley, chopped for garnishing
