Preparation Method :
- In a large saucepan, melt the butter and add the bacon, the onion, the carrot and the celery and cook until it softens.
- Add the peas and stock and bring to the boil, then cover and simmer for 1 hour, until the peas are soft.
- Allow to cool and blend in a blender or food processor until smooth.
- Now, to the pan, add the blended soup, salt and pepper and mix well.
- Add the yogurt and simmer till the soup is hot.
- Garnish with chopped grilled bacon and croutons and serve hot.
INGREDIENTS
- 10 grams butter
- 25 grams streaky bacon rashers, rinded and chopped
- 1 small - sized onion, skinned and roughly chopped
- 1 small- sized carrot, diced
- ½ celery stick, chopped
- 250 grams of split dried peas
- 1½ litres of ham stock
- Salt and pepper to taste
- 2 tablespoons of natural yogurt
- Chopped grilled bacon and croutons for garnishment
