Preparation Method :
- In a large saucepan melt the butter and fry the chicken until it turns golden on all sides.
- Cut the white part of the leeks into four lengthways and chop into 1 inch pieces and shred the green parts of the leeks.
- Wash well and add the white parts of the leeks to the chicken on the pan and fry until soft.
- Now, add the stock and bouquet garni and season to taste.
- Bring to a boil and simmer until the chicken is tender.
- Add the green parts of the leeks and the prunes.
- Simmer for a further 30 minutes.
- Remove the chicken from the soup, then cut the meat into large pieces, discarding the skin and bones.
- Take two soup bowls, place the meat pieces and pour the soup over the meat.
- Garnish with parsley sprigs and serve hot.
