Preparation Method :
- Reserve a little of the egg yolk and mix the remainder with the butter, mustard, anchovy essence and pepper to taste.
- Mix in the cheese with a fork so that it is evenly blended but as many shreds as possible of the cheese remain separate.
- Mix in the chicken lightly, then taste and adjust the seasoning if necessary. Cover and leave in a cool place for at least 2 hours for the flavours to develop.
- Serve on a small bed of lettuce, in crab shells if available, garnished with the reserved egg yolk, chopped egg white and a little sliced tomato and cucumber.
- Accompany with thinly sliced wholemeal bread and butter.

- 15 grams butter
- 7.5 ml prepared English mustard
- Few drops of anchovy essence
- Pepper
- 100 grams Red Leicester cheese, grated
- 2 cooked chicken breast fillets, skinned and finely chopped
- Lettuce leaves, sliced tomato and cucumber, to garnish
