EGG AND SARDINE SALAD

Preparation Method :
- Remove the skin, bone and spines of the sardines.
- Chop the eggs finely.
- Place the sardines in a bowl and mash finely with the eggs and add the celery.
- Beat the soured cream well together with milk and lemon juice or vinegar.
- For preparing the dressing, add the chives, salt and pepper to the cream mixture.
- Refrigerate for 15 minutes before using.
- Pour the dressing into the sardine mixture.
- Place the lettuce leaves on serving plate and then serve the salad.
- Garnish with paprika and lemon wedges.

- 2 Round lettuce, shredded
- 250 grams Sardines packed in olive oil
- 4 Eggs, hard boiled
- 2 Celery, washed and thinly sliced
- 300 ml Soured cream
- 2 Tablespoon Milk
- 2 Tablespoon Lemon juice or vinegar
- 1 Teaspoon Icing sugar
- 6 Tablespoon Chives, snipped
- 4 Lemon wedges, for garnish
- 1/2 Teaspoon Salt
- Pepper as per taste
- Paprika to garnish
