- Combine mayonnaise, curry powder, vinegar, chutney, lemon juice, salt, and pepper and mix well.
- Now add the chopped chicken breast, onion, celery, and raisins.
- Stir until everything is well-coated.
- Refrigerate overnight for development of flavour.
- While serving, place on a bed of watercress and garnish with chopped cashews.

- 2 chicken breasts, boneless and skinless, poached and diced
- 60 gram mayonnaise
- ½ tablespoon curry powder
- 1 tablespoons mango chutney or apricot preserves
- ½ yellow onion, diced
- ½ stalk celery, diced
- 20 gram cup raisins
- ½ tablespoon vinegar
- ½ lemon juice
- 20 grams chopped cashews
- Watercress, washed and de-stemmed
- Salt and pepper to taste
