FIDGETT PIE

Preparation Method :

  • Roll out pastry to fit the top of a 4 cups pie dish. Reserve the excess pastry to decorate pie.
  • Line the bottom of dish with potatoes. Layer the apples, onions and gammon or bacon on top.
  • Taste and adjust seasoning with salt, pepper and nutmeg. If apples are slightly tart, sprinkle with a little sugar before use. Pour in stock.
  • Cover with pastry and decorate with shapes cut out from trimmings. Poke a small hole in the top crust to allow steam to escape when pie is baking. Glaze with beaten egg.
  • Bake in a preheated oven at 190°C / 375°F / Gas mark 5 for 12-15 minutes.
  • Cover with foil to prevent the pastry from getting too brown and bake at 190°C / 375°F / Gas mark 5 for another 35-40 minutes. Serve immediately.

INGREDIENTS

  • 150 grams frozen shortcrust pastry, defrosted
  • 250 grams potatoes, peeled and sliced thinly
  • 250 grams dessert apples, peeled and sliced
  • 250 grams onions, peeled and chopped
  • 400 grams uncooked gammon or bacon rashers, diced into ½ inch pieces
  • Ground black pepper and salt to taste
  • Pinch of Ground nutmeg
  • 150 ml chicken stock, chilled
  • 1 egg, beaten
