Makes :

Preparation Time :
30 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Start by taking a pestle and mortar or a small blender and pound or blend the Garlic and the Coriander Roots and stalks them into a paste. Then add the Prawns, the Pepper, the Salt and the Egg and mix all of it well together.
  • Now take the Dry Bread and thickly spread the Prawn Paste on one side of each piece, then sprinkle on top with Sesame Seeds and press down firmly.
  • Now heat up 5 cm (2 inches) of Oil in a wok over at medium heat. The Oil is ready when a small piece of bread sizzles when you drop it in. It is important not to have the oil too hot or the bread will cook too quickly and turn brown, and be very careful when working with hot Oil. When the Oil is hot enough, deep fry a few pieces at a time, put the paste-side of the bread facing down, for 3 - 4 minutes or until it looks golden brown and lightly crisp.
  • Then take them out and place them paste side up now on a kitchen paper. This will help absorb the excess Oil as well.
  • Now serve hot as a starter with Sweet Chilli Sauce.
