Preparation Method :
- Mix the flour and water together in a small pan over a low heat, stirring constantly until thick and translucent. Pour into a small bowl and set aside.
- Blanch the rice vermicelli in boiling water for 30 seconds, then drain well. Snip into 2.5 cm / 1 inch pieces and set aside in a large bowl.
- Heat the oil in a wok or large heavy frying pan over a high heat. Add the garlic, green pepper, celery, spring onions and button mushrooms and stir-fry until the vegetables are softened.
- Add the liquid seasoning. Use a slotted spoon to lift out the vegetables, and stir them into the rice vermicelli.
- Divide each spring roll sheet into 4 squares. Place 2 teaspoons of the filling in the centre of each square. Fold three corners in and roll up to the fourth corner. Seal with a little of the flour and water paste.
- To make the sauce, boil all the ingredients together, stirring constantly, until the sauce thickens, about 5 minutes. Leave to cool.
- When you are ready to serve the spring rolls, heat oil in a wok or deep fat fryer until a light haze appears - about 180°C/350°F.
- Deep-fry the spring rolls in batches until they are golden brown all over. Drain on plenty of kitchen paper to ensure a crisp finish. Serve immediately, accompanied by the sauce.

- 5 tablespoon rice vinegar
- 5 tablespoon caster sugar
- 2 green pepper, finely chopped
- 2 celery stick, finely chopped
- 4 spring onions, finely chopped
- 150 grams button mushrooms, finely chopped
- 4 teaspoon liquid seasoning, such as Maggi
- 10 spring roll sheets
- 1 teaspoon salt
- 2 small fresh red chilli, finely chopped
